LOIN OF LAMB WITH CHERVIL & MINT PAINT

Using British Herb Kitchen’s Chervil and Mint Paint

 Prep time 2 minutes. Cook time 10-12 minutes. Serves 2.

INGREDIENTS

​1 lamb loin
Salt
1 tbsp vegetable or cold-pressed rapeseed oil
A knob of butter
1 jar Chervil and Mint Paint

METHOD

Preheat oven to 180C.

Heat the oil over a high heat in an oven-proof frying pan. Season the lamb loin well and sear it until the outside is caramelised and browning, roughly two minutes each side. Add the knob of butter to the pan and baste the loin.

Take the loin of the heat and brush it with the Chervil and Mint Paint. Put it into the oven and cook for 6 to 8 minutes. Take out of the oven and let it rest for 5 minutes.

OR, if you prefer to serve the lamb simply seasoned and oven-roasted, try serving it with our Chervil and Mint Raita.
