OVEN-ROASTED SALMON WITH DILL, ANCHOVY & CHILLI
SERVES 2 PREP TIME: 5 mins COOK TIME: 10 mins
2 fillets of salmon (or other firm fish – cod, hake etc)
1 tbsp British Herb Kitchen Dill, Anchovy and Chilli Paint
Heat the oven to 200C.
Pat dry the fish with kitchen paper. Place fish on a roasting tray and sprinkle on a little salt. Brush half the Dill Anchovy and Chilli Paint onto the top and sides of each fillet. Place in the oven for around 10 minutes (depending on the thickness of the fillet) until the fish is just cooked through but still moist.
We like to serve this on a bed of mixed grains or rice, with the juices poured over and some seasonal veg. Alternatively, atop wilted spinach or in place of tuna in a Niçoise salad.
